Infante D´Ximénez is obtained from a base of Pedro Ximenez grapes, which are subjected to the traditional process of “soleo”, until an intense raisinification of the fruit is achieved there on the plateau of our Andalusia. After pressing, musts are obtained that have an extraordinary concentration of sugars, then they ferment and subsequently pass to our American oak bocoys where it is mixed with our soleras following the traditional system of criaderas and soleras until achieving its peculiar personality.
